Review: Dark Chocolate Peppermint Bark by Mindy’s
I’m often skeptical of specialty, seasonal, nontraditional, or other edibles with ingredients I don’t usually try as a sweet treat. With Mindy’s Edibles, though, I have no reservations about picking up a limited time offering. So while at Sunnyside Danville, I picked up Mindy’s Dark Chocolate Peppermint Bark as a holiday treat.

James Beard award-winning master chef Mindy Segal created Mindy’s Edibles, and I have not sampled an edible of her creation I did not enjoy. Peppermint is definitely not what I would normally choose as a sweet treat, but I expected the crushed peppermint topping nestled on top of the square chocolate bar to blend well. Of course, the Mindy and the Dark Chocolate Peppermint Bark did not disappoint.
The dark milk chocolate bar measured into 10 pieces, each piece containing 10mg of THC. The bar had white chocolate ganache drizzled on top. The ganache was then topped with crushed peppermints. The mix of milk and dark chocolate with the white chocolate ganache made for a triple chocolate delight that the peppermint blended well with in flavor and texture. The flavor first hit the bitter sweet chocolate and then blended in the peppermint until they became a pleasing texture of creamy and crunchy.
Mindy’s Dark Chocolate Peppermint Bark also left an enticing minty sweet aftertaste that left me wanting another piece after eating each one. My ultimate flavor standards for edibles are to compare them to an actual treat sold at retail or boutique candy stores. Would I purchase this without the infuse THC? The answer for Mindy’s Edibles has been every time so far.
Another trusted aspect of Mindy’s Edibles is the dosing. Every Mindy’s edible I have sampled had consistent effects because of the precise dosing. The buzz started with upbeat feeling that lasted a couple hours. I never felt drowsy or tired until the very end of the buzz. I also found the head high to be rather clearheaded until later in the buzz.
Mindy’s Dark Chocolate Peppermint Bark ingredients included dark and white chocolate (unsweetened chocolate, sugar, cocoa butter, whole milk powder, soy lecithin (an emulsifier), natural vanilla flavor), crushed peppermint topping (pure cane sugar, corn syrup, pure peppermint oil, Red 40), and cannabis oil.
Overall, as with other Mindy’s I’ve sampled, the Dark Chocolate Peppermint Bark was consistent in dosing with way better than average flavor. Mindy’s has built my expectations for a reliable and flavorable edible “extremely high.” For more Illinois News Joint reviews, visit here.
